I would like to take this opportunity to introduce myself. My name is Jennifer Rollin-Busby. I am Michelle’s Personal Assistant and former client. I have embraced the raw and live food lifestyle after coming under the guidance of Michelle. I competed in March 2013 at the Perth IFBB competition and again in May 2013 at the INBA Perth Classic where I won all the divisions I entered. I have a high raw and live food diet to thank for these accomplishments and of course Michelle, the best holistic figure competition coach there is!
I am not planning to compete in the very near future but I am continuing to eat a high raw and plant based diet. I have a great recipe I would like to share with you. It is my own Raw Pad Thai recipe I have adapted from various other raw pad thai recipes I have come across on my raw food journey. I sincerely hope you enjoy!
JEN’S PAD THAI RECIPE
Sauce – combine together in a large bowl:
1 tbsp Coconut Aminos (I like this best because it is thick but you can use Braggs Aminos or Tamari)
1 tbsp Tahini (I use unhulled)
1 to 2 limes yield juice (fresh is best!)
1 to 2 cloves fresh Garlic
2 tsp fresh Ginger
1 tsp Celtic Sea Salt
Good couple grinds of black pepper
Fresh Cilantro to taste
Everything else – throw in bowl with sauce and combine:
1/2 packet Kelp Noodles
1 small Spring Onion chopped
1/2 cup spirilised or julienne Zucchini
1/4 cup grated or julienne Carrot
1/4 cup julienne Red Capsicum
1/4 cup julienne Snap Peas
1/8 cup Cashew Nuts
Nutritional Information: 283 kCal, 16 g Fat, 31 g Carbs, 12 g Protein
You can add whatever else you want like bean sprouts and snow pea sprouts. And feel free to adjust the sauce recipe to your liking. I don’t think I ever make it the same way twice! Get fit from Within!
