Recipe – Orange & Date Fudge Balls

It was an awesome day yesterday at the Nazafit Raw Food Christmas Party. The food was amazing and I am so impressed with what everyone came up with after we advised those attending that the criteria for the plate of food they were contributing was “superfood or raw is the criteria.”

I would love to share Lauren Pike’s recipe for her amazing Orange & Date Fudge Balls.

Ingredients:
1 cup almond pulp (left over from making almond milkl) or 1 cup almond meal
½ cup dates (stones removed)
Zest of 1 orange
Pinch of sea salt
¼ cup shredded or desiccated coconut
3 teaspoons Cinnamon
1 Tablespoon of vanilla essence OR small piece of vanilla bean
Splash of orange juice
1 – 2 tablespoons cacao powder
Extra coconut for rolling

Method:
Mix everything in a food processor until well combined. Roll into individual balls and coat in coconut. Place in fridge until ready to serve.
