Recipe – Rae’s Stuffed Cherry Tomatoes

This is the recipe for Rae’s contribution to the Nazafit Christmas Party of stuffed tomatoes that were quite tasty!

Unfortunately Rae arrived late as she travelled from the other end of Perth to be with us at the Christmas party. We’ve had to make do with a picture of stuffed tomatoes from the internet, and a picture of Rae and Michelle from another time.

The cherry tomatoes with the green garnish make a very festive looking entree if arranged on a white plate.

Note from Rae: Even though the fat content of these tasty little morsels is the good kind of fat, you still need to watch how many of them you consume.

Ingredients:
3 punnets of bit sized cherry tomatoes (that aren’t too small to scoop out the seeds from, but are bite sized)
1 cup pinenuts
2 cloves garlic
Handful of italian style fresh herbs (Oregano, Basil, Marjoram, Thyme, Parsley and Rosemary), small extra herb leaves to garnish.
15 semi-dried tomatoes
15 olives

Method:
Slice a very small portion of the cherry tomatoes off at the bottom to give them a flat base to stand on their own. Cut the top off the cherry tomatoes and discard the pulp.
Combine the rest of the ingredients in a food processor and blend together.
Stuff the tomatoes and arrange in the plate.
Garnish with small green leaves.
